JP's Leap Day Omelet

Happy Leap Day! Use the chance to do something you've never done before! A day like this only comes around every four years. So why not take some risks? It doesn't have to be something dangerous. It could very well just be a new recipe, using a few different ingredients, or maybe even removing an ingredient.


Today, my friend JP shows us how to work a "low-risk change" into his lunch, as he shares his recipe for egg white omelet.
It looks like a really tasty one, specially with the inclusion of vegetables and cheese filling. I'm a bit weirded out by the lack of egg yolks. I always  use the entire egg for my omelets, but I would be a hypocrite if I didn't like the idea of altering recipes. Specially on a day like this!

JP writes: 

To begin, you must 1st decide the size of you Omelet.

Ingredients
2 to 4 egg whites
Shredded Cheese
Green, Red or yellow pepper
Tomato

Optional:

Mushrooms
JalapeƱo
Salt & Pepper
Meats
Spinach
The combinations are endless.


How to make follows:

Step 1: You have 2 options, you can buy regular eggs and get rid of the yolk yourself, or just buy egg whites, which are a tad more expensive.

If you do the regular eggs, you will need to crack them perfectly in half, so that you can juggle the yolk back and forth from one shell to the other, until the egg white is all in your bowl. Whip with fork very lightly, and salt in pepper as desired.

Spray a non stick spray on your skillet and let hit up to 3 or 4.

Bonus: This is the step where you can begin to fry bacon, I choose to use Turkey Bacon. Only because I am trying to intake a low amount of calories a day. So begin making your side here

Step 2: Poor the Egg white into the skillet, as it begins to turn in a solid white color, you can add your cheese. Cheese is key for this omelet staying shut. Once the cheese begins to melt, you may then add your veggies. Let sit for about 2 minutes, at this time check your bacon.

Step3: As the cheese melts grad your spatula and begin to flip one side over onto the other. Let sit for 2 minutes, then flip the omelet over for another 2.
